Unlike doughy cakes, kutsinta is soft, sticky, and springy. This unique “bouncy” feel is achieved through the use of lye water , an alkaline solution that modifies the starch. It has a mild sweetness with subtle caramel undertones from brown sugar. Typically small, disc-shaped, and translucent, its color ranges from deep amber to reddish-brown, often enhanced with annatto extract.
